Ingredients:
1 small sweet potato, peeled and grated
1 zucchini peeled and grated
1 big carrot peeled and grated
1 (15 oz) can chickpeas, rinsed and drained
1/2 cup finely chopped spinach
1/4 cup chopped green onion greens only (no white parts)
1 egg
1/4 cup brown rice flour
1 teaspoon garlic powder
1 teaspoon cumin
1/2 teaspoon paprika
1/4 teaspoon black pepper
2 tablespoons olive oil
Instructions:
Steam or cook in a microwave sweet potato, carrots, and zucchini until tender. Cool slightly.
In a food processor, pulse the chickpeas into a coarse meal. Transfer to a bowl.
Add the steamed vegetables, spinach, green onion greens, egg, rice flour, and spices. Mix well.
Form into patties, using 1/3 cup for each. Make 6-8 patties total.
In a non-stick skillet over medium heat, cook patties in olive oil 4-5 minutes per side until browned.
Serve on gluten-free buns or bread. Top with lettuce, tomato, avocado or hummus.
