Vegetable Patties

These veggie patties are nutritious, gluten-free and lower in FODMAPs. The sweet potato adds fiber, vitamin A and lovely color. These patties often use gluten-free whole grains like rice flour, making them safe for those with celiac disease or gluten intolerance. Sweet potato provides over 100% of the daily recommended amount of vitamin A per serving. This supports healthy vision, immunity and cell growth. The combination of sweet potato, chickpeas, and vegetables supplies a significant amount of fiber to promote digestion and heart health. Enjoy!

Ingredients:

  • 1 small sweet potato, peeled and grated

  • 1 zucchini peeled and grated

  • 1 big carrot peeled and grated

  • 1 (15 oz) can chickpeas, rinsed and drained

  • 1/2 cup finely chopped spinach

  • 1/4 cup chopped green onion greens only (no white parts)

  • 1 egg

  • 1/4 cup brown rice flour

  • 1 teaspoon garlic powder

  • 1 teaspoon cumin

  • 1/2 teaspoon paprika

  • 1/4 teaspoon black pepper

  • 2 tablespoons olive oil

Instructions:

  1. Steam or cook in a microwave sweet potato, carrots, and zucchini until tender. Cool slightly.

  2. In a food processor, pulse the chickpeas into a coarse meal. Transfer to a bowl.

  3. Add the steamed vegetables, spinach, green onion greens, egg, rice flour, and spices. Mix well.

  4. Form into patties, using 1/3 cup for each. Make 6-8 patties total.

  5. In a non-stick skillet over medium heat, cook patties in olive oil 4-5 minutes per side until browned.

  6. Serve on gluten-free buns or bread. Top with lettuce, tomato, avocado or hummus.
