Vegetable antipasti

An antipasti dish with all the best earthy vegetables and their distinctive texture and taste. This dish is suitable for Sibo, Gastritis, Diverticulitis, IBS and as part of a natural treatment for Crohn's and Ulcerative colitis in remission.

Ingredients:

3  peeled and thickly cut potatoes,

3 peeled carrots cut into 3 parts,

1 large onion cut into 4 quarters, fennel cut into 4 quarters,

1 scallion peeled and sliced ​​into strips,

2  sweet potatoes peeled and sliced ​​into long strips

Instructions:

Mix together all the vegetables with olive oil, balsamic vinegar, date syrup, and spices. Spread on top of a tray, wrap with baking paper and bake at 180 degrees for about 45 minutes. Stir occasionally while baking.
