Tofu is made from soybeans and contains all essential amino acids, making it a complete protein source for vegetarians/vegans. Tofu meatballs provide protein comparable to meat-based meatballs without animal products. Perfect as part of a vegan or vegetarian menu. Full of flavor and protein. Ingredients:
3 tbsp olive oil
3 crushed garlic cloves (optional)
350gr silken or light firm tofu
2 tbsp of tahini
1 tbsp soy sauce
30g almond flour
½ tbsp cornflour
½ cup spring onions (thinly sliced)
10g finely chopped parsley
10g finely chopped coriander
1 tsp salt
dry spices to taste: pepper, thyme, basil, oregano.
Instructions:
Place all the ingredients in a food processor and pulse until roughly chopped. With oiled hands form into ping-pong-sized balls, compressing them as you go. Place them on an oiled baking tray, spaced apart, and bake for half an hour, until lightly golden.
