Soft and juicy fritters that are so easy to prepare! Thanks to the tofu, this dish is high in protein, and very easy to digest. These fritters are excellent for anyone who is dealing with Crohn's, Ulcerative colitis, Sibo, IBS, Gastritis and Diverticulitis.
Ingredients:
A pack of tofu,
2 peeled zucchini, cut into cubes,
½ of a cup of hummus flour (can be replaced with any other flour),
1 large onion (optional)
2 eggs,
1 teaspoon of cumin spice,
a pinch of salt and pepper,
2 teaspoons of olive oil.
Instructions:
Grind the tofu and the zucchini in a food processor.
In a pan, steam the onion with a little bit of oil until it becomes golden.
Add zucchini cubes and continue to steam.
Mix everything well together with eggs, flour, and spices and make fritters.
Bake at 180 degrees for about 20 minutes on each side, until the fritters become slightly crispy.
