These meatless meatballs are an easy and quick solution for a healthy and wonderful vegan meal. Gluten-free, full of protein, and dietary fibre. Excellent as part of a natural treatment for Sibo, Crohn's and Ulcerative colitis (during remission) , Celiac disease and for anyone who looks for a healthy gluten-free meal.
Ingredients:
2 cups of cooked quinoa (or basmati rice)
1 finely chopped onion (optional)
1 carrot coarsely grated .
1 zucchini coarsely grated and squeezed from liquids.
4 scrambled eggs(preferable carrot.
1/3 cup of rice flour or quinoa flour.
1 tablespoon of coconut oil.
A pinch of salt.
Instructions:
Mix all the ingredients in a bowl.
Create well-compressed and flattened patties.
Place on a greased baking paper and drizzle with a little bit of olive oil
Bake on medium heat for about 15 minutes on each side
Serve warm or at room temperature.
