Lentil carrot patties make an easy, gluten-free, nutritious, meatless meal or snack that is packed with protein, fiber, essential vitamins and minerals, and compounds that fight inflammation for better health. Ingredients:
8 peeled and finely grated carrots,
1 finely chopped onion (optional),
A cup of orange lentils soaked for 3 hours, cooked and mashed to a puree,
½ a teaspoon of salt,
½ a teaspoon of curry powder,
8 tbsps of olive oil.
Instructions:
Mix all the ingredients to an even texture. Form round patties with wet hands and place them on greased baking paper. Bake on medium heat for about half an hour, turn and bake on the other side for another 15 minutes.
