Healthy Pizza
Ingredients:
For the base:
Half a head of cauliflower
1 zucchini
2 tablespoons of ground flax seeds
2 tablespoons of chia soaked in half a glass of water overnight
2 tablespoons of lemon juice
A quarter of a teaspoon of Himalayan/sea salt
1 teaspoon Italian spice mix
Half a teaspoon of garlic powder
1 teaspoon basil
To make vegan cheese:
1 cup macadamia nuts
1 cup of cashew nuts (can be replaced with other nuts)
Half a glass of water
1 teaspoon of probiotic powder (just open a capsule of any probiotic supplement)
2 tablespoons of lemon juice
salt to taste
Cherry tomato halves or any other addition you like
To make tomato sauce:
6 medium tomatoes (about 3 cups)
2 small garlic cloves (or 1 large)
2 tablespoons of dried basil
1 teaspoon Italian spice mix
A quarter of a teaspoon of Himalayan salt
Half a teaspoon of spirulina powder (optional)
Instructions:
Preparation of the base:
Grind cauliflower and zucchini inside a food processor until they are crushed to the size of rice.
Add the flax seeds, the chia together with the soaking water, lemon juice, salt, basil, spice mixture and garlic powder and grind again in the food processor until a uniform mixture is obtained.
Spread the mixture on top of a baking paper and shape it into the desired shape with your hands and a spatula.
Dry at a temperature of 140 °C and lower to 110 °C after two hours. Dry until the mixture is golden brown and turn it when it is easy to slide it off the paper (12-24 hours).
Making the cheese:
Add the nuts, salt, water and lemon juice to the blender and blend until a smooth mixture.
Spread the desired amount on the prepared base of the pizza. Put the rest in the fridge and use it later.
Making tomato sauce:
Add the ingredients to the food processor and mix using pulses until a smooth mixture.
Spread the desired amount on the prepared base of the pizza. Put the rest in the fridge and use it later.
After applying the cheese and tomato sauce, you can decorate with various toppings of your choice
