Energy balls

A home-made energy snack, gluten free and with no added sugar. If you are looking to start the morning with something sweet, or just to indulge yourself in between meals, this is a great option for you!

Ingredients:

20 Medjool dates, 2 tablespoons of almond or peanut butter (sugar-free), a cup of coconut/almond flour, 1 cup of crushed nuts, (walnut/brazil/hazelnuts, etc.), a cup of raw cocoa powder, 1/2 a cup of coconut cream, 1/2 a cup of coconut flakes, a zest from half a lemon (optional), 2   tablespoons of maca powder (optional).

*You can play with the quantities so that you get a smooth texture, but not liquid or too soft so that the balls won't fall apart.

Instructions:

Mince or grind the dates to a smooth consistency. Mix the dates pulp with all the rest of the ingredients in a bowl. Make sure that the mixture is not too soft. Wet your hands and roll small compressed balls. It is advisable to prepare a good amount in advance and keep it in the freezer, to have a healthy snack available at all times.
