This rice pudding is one of my favorite desserts! Low in fibre and easy on the digestive system. Perfect as part of a natural treatment for Crohn's and Ulcerative colitis, Diverticulitis, Gastritis, IBS and for conditions which require a gluten-free diet, like Celiac disease.
Ingredients:
4 cups of water
¾ cups of white basmati rice after soaking in water for several hours,
4 cups of almond/rice or coconut milk,
1/2 a cup of natural maple syrup (or 1/8 teaspoon of stevia powder),
1 teaspoon of cinnamon powder,
1 teaspoon of natural vanilla extract.
Optional :
¼ a cup of organic raisins,
cardamom powder.
Instructions:
Bring the water to the boil in a pot.
Add the rice and cook uncovered for about 5 minutes, remove from the heat and let it stand for 5 minutes.
Filter, pour the water and return the rice back to the pot.
Add almond/coconut/rice milk and the maple syrup.
Bring to the boil, lower the heat, and continue to boil on low heat for another 30 minutes, whilst stirring.
