A great salad, full of minerals and antioxidants. Perfect as a side dish or a main meal.
Ingredients:
1 cup black rice (soaked overnight), ¼ cup cranberries OR goji berries (chopped), ½ lemon juiced, Salt to taste, 1 Avocado (diced), 1 Broccoli head (cut in flowerets).
For the dressing:
1 tsp Dijon mustard, 1 tbsp apple cider vinegar, 2 tsp maple syrup, 1 tbsp of water, 1 tbsp extra virgin olive oil, pinch of salt and pepper.
Instructions:
Cook rice in 2 cups of water. Bring to a boil, put the lid on, and turn the heat down. Cook with cover on for 25-30 minutes till all water is absorbed completely and the rice is soft. Stir fry the chopped broccoli in the pan in extra virgin olive oil, lemon, salt and pepper for 5 minutes.
Dressing: whisk together all the dressing ingredients. Put together the cooked rice, the sautéed broccoli, diced avocado, and the dressing and mix carefully. Add dressing and enjoy it!
