Asian noodle soup


Half a package of rice or buckwheat (Soba) noodles

2  garlic cloves (optional)

1  carrot, peeled and cut into small pieces,

1  zucchini, peeled and cut into small cubes,

Half a ginger root .finely chopped,

2  tablespoons of soy sauce,

1 teaspoon of coconut oil,

1  tablespoon of sesame oil,

2  teaspoons of water.


Steam the vegetables inside a steamer for a few minutes until they are partially softened.

Add boiling water or vegetable/meat stock into a pot and add vegetables, noodles, spices, soy and ginger.

Bring to the boil and cook until the noodles are ready.

Add the sesame oil and continue boiling for another 3 minutes.
