Rice with lentils

Delicious, filling, and easy-to-prepare dish that simply goes with everything!

Ingredients:

  • 2 cups of basmati rice (white or whole) after soaking for several hours

  • 1 cup of lentils (green, orange or black) after soaking for several hours

  • 1 finely chopped onion (optional)

  • 3 crushed garlic cloves (optional)

  • 1 finely grated carrot

  • 1 crushed tomato

  • spoon of sweet paprika (optional)

  • Salt and pepper to taste

  • Dried spices before tasting: oregano, thyme, basil

  • Glass of water

  • 3 tablespoons of olive oil

  • A handful of cashews (optional)

  • A cup of chopped parsley for sprinkling

Instructions:

  1. Cook the lentils in boiling water for about 15 minutes, add the rice, cover and cook for about another 15 minutes.

  2. Fry the onion with a tiny bit of olive oil in a pot until it is golden, add carrot and garlic and fry for another 2 minutes.

  3. Add tomato, spices, salt, pepper, cashew nuts and some water and cook for 2 minutes.

  4. Add the rice with the lentils and cook for another 5 minutes.

  5. Sprinkle chopped parsley before serving.
