Delicious, filling, and easy-to-prepare dish that simply goes with everything!
Ingredients:
2 cups of basmati rice (white or whole) after soaking for several hours
1 cup of lentils (green, orange or black) after soaking for several hours
1 finely chopped onion (optional)
3 crushed garlic cloves (optional)
1 finely grated carrot
1 crushed tomato
spoon of sweet paprika (optional)
Salt and pepper to taste
Dried spices before tasting: oregano, thyme, basil
Glass of water
3 tablespoons of olive oil
A handful of cashews (optional)
A cup of chopped parsley for sprinkling
Instructions:
Cook the lentils in boiling water for about 15 minutes, add the rice, cover and cook for about another 15 minutes.
Fry the onion with a tiny bit of olive oil in a pot until it is golden, add carrot and garlic and fry for another 2 minutes.
Add tomato, spices, salt, pepper, cashew nuts and some water and cook for 2 minutes.
Add the rice with the lentils and cook for another 5 minutes.
Sprinkle chopped parsley before serving.
