Ingredients:
1¼ cups unsweetened coconut flakes
½ cup coconut butter
50g collagen powder
1½ tbsp lemon zest
2½ tbsp fresh lemon juice
2 tbsp stevia powder or 10 drops liquid stevia extract
1 tsp vanilla extract
Pinch of salt (optional)
2 tbsp coconut oil
Instructions:
Place the coconut flakes in a food processor and pulse until coarsely ground. Add the remaining ingredients and blend until a dough-like mixture forms. Roll into evenly sized balls, approximately 2.5 cm (1 inch) in diameter. Refrigerate for at least one hour before serving to allow them to firm up. Store in the fridge or freezer until ready to enjoy.
Keep in an airtight container in the fridge for up to three days, or freeze for up to two months.
