If you are looking for a great and light dessert with easy to digest ingredients, this cake is perfect for you! Low in gluten and fiber. Very suitable as part of a natural treatment for Crohn's, Ulcerative colitis, gastritis and Diverticulitis.
Ingredients:
2 eggs,
1/3 a cup of maple syrup,
1/3 a cup coconut oil,
3 tbsps of water,
1 cup of white spelt flour,
1 teaspoon of baking soda,
1 cup of lemon juice,
1 flat spoon of cinnamon powder,
2 peeled and grated apples,
1/3 a cup of chopped walnuts (optional).
Instructions:
Preheat the oven to 180 degrees.
Mix the flour, soda, and cinnamon powder in a bowl.
In a separate bowl, mix the eggs with the maple syrup, oil, and water.
Add the wet mixture into the dry flour mixture and finally add the grated apples and nuts. Mix everything thoroughly.
Pour into an English cake pan and bake for 35-40 minutes.
For the vegan version:
Instead of 1 egg add 1/2 of mashed banana or ¾ cup of applesauce.
